Egg Whites Made Better!
I have been using Papetti Egg Whites (now Crystal Farms) for years. I love them because they are already pasteurized; two egg whites come in a little plastic cup that I empty many mornings into a custard bowl; pop into the microwave and 2 minutes later have perfectly instant “souffle” egg whites. Now I found a way to make them better!I know what you are thinking! Now how can you make such a good thing better??!!! LOL!!
Well, for those of you that DO EAT egg whites, you know they are boring as all hell! Lots of people add ketchup, salt, hot sauce, salsa (notice the color) to make them taste like something.Purists can do what I am planning to do going forward! For this weekend, I found some great frozen herbs. Frozen herbs, in my egg soufle is as good as fresh (minus the rotting in the fridge when you don’t use them all)! I can add some shallots, basil, oregano and a little pepper and totally changed the eggs and maybe the desire to eat them.
I added a couple of slices of tomato to my plate (for that color we need to make things appealing) along with 3 slices of turkey bacon for a great “lean” breakfast. Coupled with a cup of coffee, I then had the energy to ask all my FB friends to change their link to my new user name profile!
Check out White Toque Frozen Herbs in the frozen foods section of your grocery store. I found them in A&P. The come in a small plastic container which is meant to be stored in freezer and can be used in sauces, soups and of course eggs.
The other find was Dargal Herbs, “original blend” which consists of Basil, Oregano, Rosemary and Thyme. Same wonderful container for the freezer; great for eggs, soups, sauces and grilled chicken.
