Collagen + C = Unstoppable Energy

Eat Your Greens!

Just got in from my 45 minute run on my Kangoo Jumps and of course, the first thing I need to do is eat something! I am usually famished after a good cardio workout. So, while eating a small bowl of Greek yogurt (smothered in raw blanched almonds and a swizzle of honey), I found a reminder recipe for dinner tonight. Collard Greens – Sauteed!

Saute’ the Greens

I really have not been a fan of beets in my salad. I love the color, but personally haven’t been crazy about the vegetable itself. However, Martha Rose Shulman, New York Times Health columnist wrote a couple of articles this week about the health benefits of beets – and the greens – that made me take a second a look at using the food for health benefits.
